 | 5 lbs red potatoes |
 | 5 hard boiled eggs |
 | 1 medium onion |
 | 1 lb bacon |
 | 1 1/2 cups of sugar |
 | 1 1/2 cups vinegar |
 | Black pepper |
 | Parsley |
 | 1 - 2 Tablespoons of cornstarch |

Boil potatoes, peel and dice.

Dice eggs and add to potatoes.

Chop bacon and dice onions.

Sauté onions and bacon in a frying pan until done.

Add sugar and vinegar to bacon mixture.

Bring to a boil.

Mix 1 1/2 tablespoons of cornstarch with 1/2 cup cold
water.

Stir cornstarch mixture into vinegar mixture stirring
until thickened. (Use more if necessary)

Add to potato mixture and stir. Season with pepper
and parsley.

Makes about 10 servings. Serve hot or cold.
