Pie Crust
 | 1 1/2 cups flour |
 | 1/2 cup vegetable oil |
 | 1/4 cup milk |
 | Pinch of salt |
Mix together with a fork. In a 9 inch pie pan,
pat crust across the bottom, then up the sides. |
Filling
 |
2 eggs |
 |
1/2 cup brown sugar |
 |
1/2 cup white sugar |
 |
3/4 cup half and half |
 |
1/4 cup melted butter |
 |
1 T vanilla |
 |
1 1/2 - 2 cups mashed cooked sweet potatoes |
Mix all ingredients together and then pour into pie
shell. Bake for 10 minutes at 400 degrees, then reduce temperature to
325 and bake for 30 minutes longer.
