Sweet Potato Pie

 

 

Pie Crust

bullet1 1/2 cups flour
bullet1/2 cup vegetable oil
bullet1/4 cup milk
bulletPinch of salt

Mix together with a fork.  In a 9 inch pie pan, pat crust across the bottom, then up the sides.

Filling

2 eggs

bullet

1/2 cup brown sugar

bullet

1/2 cup white sugar

bullet

3/4 cup half and half

bullet

1/4 cup melted butter

bullet

1 T vanilla

bullet

1 1/2 - 2 cups mashed cooked sweet potatoes

Mix all ingredients together and then pour into pie shell.  Bake for 10 minutes at 400 degrees, then reduce temperature to 325 and bake for 30 minutes longer.
